A Kitchen That Listens to the Seasons

Founded in 2009 on Rue de la Trémoille in the 8th arrondissement, Maison Dorval is the expression of Chef Étienne Dorval's lifelong dialogue with the seasons. Classical French technique meets the finest regional producers — oysters from Cancale, duck from Challans, truffles from the Périgord — each dish a quiet autobiography of where we are in the year.

Every menu is written no more than one week in advance. The kitchen follows the land, not the calendar.

Coquilles Saint-Jacques

Hand-dived scallops from the Bay of Brest, cauliflower velouté, blanched hazelnuts, aged Périgord truffle. A dialogue between sea and earth that opens each autumn menu.

Served precisely twelve minutes after ordering. This soufflé has been baked to the same measure since Chef Dorval's first winter in Paris — risen at the edge of golden, beside a quenelle of vanilla ice cream.

L'Ambiance

A Room Designed for Intimacy

Maison Dorval seats only twelve tables — by design. The warm light, aged oak floors, and original plasterwork ceiling of the Haussmann building that has housed us since opening create an atmosphere of unhurried elegance. There is no background music. The conversation and the cuisine are the experience.

Private Dining and Exclusive Events

For those who wish to experience Maison Dorval in complete privacy — a proposal, a significant birthday, a board dinner — we offer exclusive use of the Salon Dorval, a private room seating up to twelve guests.

Upon arrangement, the full restaurant is available for events of up to forty guests, with a bespoke menu designed for the occasion by Chef Dorval.

We welcome you Tuesday through Saturday, for lunch from noon and dinner from seven in the evening.
